HOW TO BREW A GOOD CUP OF COFFEE!
Drip method coffeemaking is the optimal process for brewing
gourmet beans. Don't use a percolator if you can help it.
Water and coffee already brewed in the first part of the
cycle is mixed through the grinds repeatedly until the
percolator finishes brewing. This causes the coffee to taste
astringent. You want the water to be in touch with the
grinds only once. That's why coffee made by pouring hot
water over grinds in a filter paper is best.
Be sure that you grind your beans to match the filter papers
or machine that you are using. Too fine a grind will cause
the filter to clog- to coarse a grind will make the water
flow through the filter too fast and your brew will be weak.
Always use the same amount of grinds per pot, about 2
tablespoons per cup and 1 for the pot. If its too strong
find an amount per cup that suits you and stick to it. Once
you've established your personal cup amount, use it
everytime. If you buy a coffee that tastes too strong, don't
use less per cup, changes to a lighter bean or roast.
